I am going to continue to talk about Batak spice andaliman. Besides for the taste, Batak uses andaliman to preserve food (that is why most of the food is prepared few days before). But there is so much more than just using it for food. The oil from andaliman can be used against mosquito bite, massage oil etc. But my Grandmother had another idea. She used it to help her grandchildren to be able to pronounce the ”R” alphabet. I remember when I was little and I had difficulty with the ”R”. She simply took some andaliman seed and told me that the magic seed would help me with my ”R” and I would even know how to fly afterwards. I thought she was pulling my leg, but I chewed the seed anyway. But darn, the tip of my tongue started to feel very weird. It was slightly spicy, tingly, numb, rigid a
nd at the same time my mouth started to water so much. Nothing a 4yo kid would love! So I started to crazily rub my tongue to my hard palate over and over, bit it and made funny sounds at the same time(all the time
my grandma was watching me as if she was the witch of Oz who is waiting for her prey to become a frog or something). Short after I started to hear myself spitting the ”R” and that is when Grandma started to clap her hands with satisfaction. Chewing andaliman helped me to locate and shape my tongue correctly to pronounce the ”R”. Oh wait, I was so happy that I jumped from one furniture to another while flapping my hands.. yes apparently I was even flying back then 🙂
As I’ve mentioned before, we usually use other strong spices together with andaliman. But today’ recipe, I will skip chili and used just enough spices. You will also need to use slow cooker, or something similar, because the process to get a really fine texture you will need to cook the meat very long and in the right temperature. A little tips if you don’t have slow cooker, you can also use rice cooker, although you will need to pay extra attention so it won’t stick to the bottom of the pot.
Lanny’s Pulled Beef
app.1kg beef(try not to get rid of the fat as your pulled beef will be more juicy when it has fat in it).
1-2 table spoon ground andalima
5cm ginger (crush)
1 lemon grass (bruise and tie a Knott)
2 bay leaves
1 teaspoon ground coriander
2 tbs browned coconut flakes
app.2 table spoon honey
a drizzle of oil
just enough water
Pre-heated your slow cooker to High/cook. Rub your meat with oil, then rub some salt and sugar and place it in your slow cooker. Put ginger and lemongrass and place in. In a food processor, mix and grind garlic, onion, coriander, andaliman and a little bit of salt with just enough water, then rub everything to your meat. Sprinkle browned coconut flakes, and then drizzle honey on top and put the lit on. You will need to let it cook for about 6-8 hours. The first 2 hours high/cook, and then turn it to lower/medium for the rest of the time. If you have the possibility, check your meat every hour, pour the juice over the meat. Or if you have a fine slow cooker like mine, you can leave it and let the cooker do it’s job :D. Tips: if you want to leave the slow cooker while you are away from your home, lower the heat into medium and ad another 1-2 hours.
When you can start to pull your beef with two fork then it is done! Once you’ve pulled everything, mix the meat with the juice and serve.
