We all know that summer is related with barbecue and grilling. But after way too many grill nights my stomach is finally screaming for something Indonesian. By all means spicy and strong. Meat is not really my option this time so I went for something vegetarian and high in carbs. To be precise I made the carbs with carbs dinner. Isn’t it awesome? I literally spent hours to make several Indonesian dish and I was really happy. Not to mention my husband who was also thrilled to be served Indonesian food ha ha ha..
So besides tons of other Indonesian dishes, here comes the very simple carb on carb recipe.
Sambal Kentang Petai
500grams Potatoes (peel and dice, then soak them in cold water)
a handfull of Green (stinky) beans(buy them at asian store)- we call this petai
2 lime leaves
1/2 lemon grass (give it a smash)
app. 5 cm galangal (smash)
1 bay leaf
app. 250 ml coconut milk
salt and sugar
Deep fry diced potatoes. Grind these and make sambal: Chili, shallots, garlic. Slice thinly lime leaves.
Heat up your pan with enough oil and reduce the heat just before you put petai, then after a short while put sambal, lemon grass, galangal and bay leaf. Stir fry until it smells good. Put salt and sugar(just a tiny bit). Then pour coconut milk and let it simmer for a while. Then put potatoes and let everything reduced in a medium heat pan. Don’t for get to stir every now and then. Serve with rice or as a side dish.
