Keto Soup Lunch

I’ve been doing keto for almost 2 months now. Although I love my carbs to the fullest, I find keto way of eating has given great effect to my body. I even combine my keto diet with 18-24 intermitten fasting(I will write more about it). Today I went for 18 hours fasting and ate a bowl of rice soup, inspired of the Indonesian taste. It felt really nice in my tummy. Especially after a crazy night without a proper sleep(I slept less than 5 hours). What is best about this soup is that it has great fats, moderate protein and less carbs that you need for keto-diet. I’ll give you the recipe for this super yummy rice soup. Trust me, with enough fat, you won’t feel hungry for long time.

PS. I will put amount of carbs for each ingredients.

Keto Soup Lunch

Inspired of the Indonesian taste (4-6 portions)
Ingredients:

1 dl (about 100 grams) of rice – (28g)
200 grams broccoli – (3,6g)
1 carrot (weight about 30-40gr) – (5g)
50 grams Spring onion – (3-4g)
1 clove garlic – (0,99g)
1-1,5 liter of your favorite broth – (mine was 1g)
1 tbs of cold-press coconut oil
1 tbs of grass-fed butter
Total carbs: app.42,6 for each portions you will be getting 7-10grams of carb

Obs! you know that you don’t count your calories on keto? 🙂

How to:
Give your veggies a good chop to speed up your cooking and cook and bring to boil everything. Stir every now and then. Once everything is cooked, using stick blender(hand mixer), mix and mash everything into a thick and creamy rice soup. Put coconut oil and grass-fed butter just before eating(there is no strict rule on how much butter you have to put into your bowl he he.. go crazy!). Sprinkle ome sea salt or any salt you wish for.
