I’ve got some friend who are vegans(well I guess nowadays everyone has at least one he he). Eventhough I am not vegan myself, I love vegan food and mostly I love the challenge of creating vegan food that is up to my standard 😉
Not too sure if I’ve mentioned it earlier, but I dislike reading recipes..I usually just scan them quickly and then doing it on my own way. So I did this meringue recipe according to my own method and taste and my friends and family liked it very much.
So here we go, Vegan meringue or in Swedish would be vegansk maränger.
1 Package of chickpeas, drain the liquid and pour it into your mixing bowl – you will be getting approximately 3/4 to 1 cup. Spare the peas for your salad 😉
1 cup of sugar
a drop of lime/ lemon (use vinegar if you are allergic to citrus fruit)
Whip everything for about 5 – 15 minutes in a high speed. ** if your mix
er is a great one you will only need app.5 minutes. Try to avoid whisking with your hand so you won’t injure your elbow. PS: This amount might seem too little but tru
st me, you will be getting more than enough meringues.
You can choose to use your icing pipe and form your batter as you like, or jut spread it on a baking tray(always use baking sheet).
Bake it for 1,5 hours on 100 Celcius
I turned the heat off after 1,5 hours and let the meringues absorb the heat in the oven before I cool them on a cooking tray.
if you want, leave them over night to get crunchier result, but with my kids around and munching my meringues whenever they are passing by, well, it never survived the night hahaha…
