My niece Emelie was known as the picky eater. Well, she is still are, more or less (sorry darling I just have to reveal ha ha). Since I was born to become the ”feeder” and as her aunt, it is my task to always try to feed her with my various cooking. I usually succeded, BUT never in my life I saw her eating egg. Boiled egg! But she ate my boiled egg sambal, and lots of it!! Either she really love her aunt and wanna make me happy, or she really love the eggs..or probably both :p
In this post, I’m gonna show you how we Indonesian consume eggs. Not just omelet, but we love to take eggs to the next level..the maindish level, or ok, you can have this egg as side dish too, or if you’d like as snacks(oh snap, nooooo hahah).. I will be putting this recipe on the egg cathegory.
Oh btw, I made approximately 100 eggs sambal for my sister’s new year’s eve party(where I also made about 14 kinds of food for 150 persons. Not bad eh??). but in this recipe, let us minimize the amount to 10 eggs 😀

10 eggs (boil with some salt. When it’s boiled, soak them in really cold water before you peel the egg shell. you will have a perfectly smooth surface!)
Frying oil (lots of’em)
5 red Chili (now, this is really up to your taste, how strong and deadly you want the taste is)
1 Red bell pepper (seeded).
5 shallots (allternative use 1/2 onion)
2 cloves garlic
salt, peper, sugar
Heat up oil in a frying pot and fry the boiled eggs. You should have enough oil to cover the eggs and make sure the oil is hot enough, then you won’t need to fry much too long and thus, the oil will not be absorbed into the eggs(which will make it soggy). Remember, we would like the slightly crunchy surface and not burn, bubly and soggy surface.
Put all the sambal ingredients in a food processor (or mortel if you’d like). Heat up a frying pan and put some oil. Then fry all the ingredients, pour salt, pepper and some sugar(sugar is to balance all the taste). Stir it well. Lower the heat and let it reduced and don’t forget to stir it every now and then. TIPS! When frying sambal and you sneeze like crazy, that would means you need to have a good balance of salt and sugar 😀
Mix fried boiled eggs into sambal and let it absorbed a little bit before you serve with hot and steamy rice!!
